It all starts with ingredients. We are fortunate here. We have one of the World's great natural larders around us, and its our job to get that food to you in its prime.

We couldn't do it without our suppliers giving us access to those raw ingredients. Welsh where possible, and ideally from within 50 miles of the kitchen door.

The menu represents a personal distillation of nearly 30 years experience of cooking (and a lot more eating!). It is based very firmly on our fantastic Welsh produce, which I believe cannot be bettered anywhere in the world.

We endeavour to treat it with the respect it deserves, not masking flavour for the sake of cleverness or complication.

Gareth follows the Slow Food Principles of "Good, Clean and Fair" and will never knowingly allow G.M. 'freaky food' to be used in our kitchens.

Bar & Wines

The Wynnstay stocks real ales from the length and breadth of Wales as well as one or two from across the border.

Amongst the most regular attenders are Brains' "Reverend James" and Greene Kings' "I.P.A."

The only music in the bar is from occasional impromptu renditions by local or visiting choirs or performers - piped tunes are right out.

Public bar opening is 12noon to 2.30pm and 6pm to 11pm though residents get much more relaxed hours. Parties may arrange for a late bar if they do so well in advance.

Yet more arduous testing has gone into the latest revision of our wine list. Lots of old favourites are still there, such as the Black River wines from Patagonia, but now there are some new ones to try.

From the "wriggly tin" of New Zealand's Tinpot Hut to the "Mad House" in Italy's Piemonte, all our wines have been passed by the management.

Bar closing times

The Hotel bar normally closes at 11pm, 10.30 pm on Sundays but may remain open later at the discretion of the duty manager.

If you wish to have a later bar, please advise us in advance - so that we can ensure that we have staff to cover that.


A Big 'HELLO' from the Pizzeria, we’re the less formal side of the Wynnstay.

But don’t get the wrong idea, we’re just as passionate about the food and service we provide, just ask the Times (yes…The Times) who have voted us the best pizzeria in the UK 2 years running.

All our pizzas are hand thrown and made to order using the finest ingredients to recreate both the Italian classics and a few of our own Welsh innovations.
